Place chicken breasts into the bottom of the slow-cooker.
In a medium mixing bowl, add the chicken stock, olive oil, lime juice, garlic, cilantro and seasoning. Stir and pour over chicken.
Cook on low for 7-8 hours or high heat for 3-4 hours.
Once chicken is cooked, remove it from the slow-cooker and shred the chicken.
Place the shredded chicken back into the slow-cooker for 15-30 minutes.
