Greek Salad with Grilled Chicken

Ingredients

Greek Chicken Marinade

  • 1 cup Greek yogurt
  • 2 tbsp olive oil
  • 3-4 cloves garlic
  • juice from half of a lemon
  • 1 tsp oregano
  • 1/2 tbsp fresh basil
  • 1/4 tsp salt
  • pepper to taste
  • 4 boneless skinless chicken breast (800 g)

Greek Salad

  • 8 cups dark leafy mix of lettuce (spinach, romaine, etc)
  • 1 red onion (sliced thinly)
  • 1/2 cup cucumbers
  • 1 bell pepper (sliced thinly)
  • 1/2 cup tomatoes
  • 10-15 olives
  • 3/4 cup feta cheese (100 grams)

Greek Salad Dressing

  • 1/2 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp oregano
  • 2 cloves garlic
  • 1 tsp salt
  • black pepper to taste
  • juice from half of a lemon
  • 1 pinch sugar

Instructions

Greek Chicken

  • In a medium bowl, combine all the ingredients and stir well.
  • Add chicken and leave to marinate for at least 30 minutes before grilling.

Greek Salad

  • Place the lettuce into a large bowl
  • Thinly slice all the veggies and place over the lettuce
  • Top with feta cheese

Greek Salad Dressing

  • Combine all ingredients and whisk together. Place into a container. Top the salad with the dressing and store the remaining dressing in the fridge.
