Sausage & Pepper Roast Pan Dinner

Ingredients

  • 1 lb of sausage Andouille or similar
  • 2 bell peppers
  • 2 potatoes
  • 1 medium onion
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp of onion powder
  • 1 clove garlic
  • 1 tsp of paprika

Instructions

  • Preheat oven to 400 degrees (200 Celsius)
  • Chop sausage, vegetables and garlic. Cut the potatoes fairly small so they will cook fast.
  • Add to plastic bag
  • Add remaining ingredients to bag
  • Shake to combine ingredients
  • Add parchment paper to pan
  • Add all ingredients to pan
  • Bake for 25-30 minutes or until potatoes are fork tender. Stir as necessary so everything is cooked evenly.
