Greek salad loaded with fresh ingredients, served with marinated grilled chicken and topped with a homemade dressing. This quick and easy Greek salad is perfect for a family dinner or can be packed for weekday lunches.
Traditional Greek Salad
The traditional Greek salad is simple and uses only a few high quality fresh ingredients: tomatoes, cucumbers, red onions, olives, bell pepper and feta cheese. My Greek salad has a few more ingredients but it is based on the same idea: using fresh crispy veggies with a flavorful dressing. This delicious salad is easy to put on the table when you need something quick and healthy for dinner. It can also be used to meal prep for weekday lunches.
Marinated Grilled Greek Chicken
This is one of my favorite marinades for chicken. The Greek yogurt helps keep the chicken moist and the oregano and lemon really packs a fresh flavor. Once you have made the marinade for the chicken, you can leave it to sit while you chop all the veggies for the Greek salad.
You’ll want to marinate the chicken for at least 15-30 minutes to let the flavor sink in. You can also prepare the chicken the night before and leave it overnight in the fridge to marinate. This marinated grilled Greek chicken is also good on it’s own or used to stuff into pita bread for gyros.
Homemade Greek Dressing
This Greek salad would not be complete without a good homemade dressing. Homemade salad dressing is so easy to make and much better for you than store bought dressing. The garlic, oregano and red wine vinegar goes perfectly with the crispy veggies in the salad. Simply whip up this homemade Greek dressing, put it into a mason jar (or your favorite container) and store in the fridge. It will be good for up to a month in the fridge, but it never lasts that long in my house.
Homemade Pita Bread
Just for fun, I tried making homemade pita bread. I used this pita bread recipe from Sweet Simple Vegan. Oh my goodness. Ya’ll. Homemade bread is my weakness. Making pita bread is super easy to make, just takes a little patience. You can use the pita bread to sop up the Greek salad dressing or use it to make a gyro stuffed with the marinated chicken and salad ingredients.
Greek Salad with Grilled Chicken
Ingredients
Greek Chicken Marinade
- 1 cup Greek yogurt
- 2 tbsp olive oil
- 3-4 cloves garlic
- juice from half of a lemon
- 1 tsp oregano
- 1/2 tbsp fresh basil
- 1/4 tsp salt
- pepper to taste
- 4 boneless skinless chicken breast (800 g)
Greek Salad
- 8 cups dark leafy mix of lettuce (spinach, romaine, etc)
- 1 red onion (sliced thinly)
- 1/2 cup cucumbers
- 1 bell pepper (sliced thinly)
- 1/2 cup tomatoes
- 10-15 olives
- 3/4 cup feta cheese (100 grams)
Greek Salad Dressing
- 1/2 cup olive oil
- 3 tbsp red wine vinegar
- 1 tsp oregano
- 2 cloves garlic
- 1 tsp salt
- black pepper to taste
- juice from half of a lemon
- 1 pinch sugar
Instructions
Greek Chicken
- In a medium bowl, combine all the ingredients and stir well.
- Add chicken and leave to marinate for at least 30 minutes before grilling.
Greek Salad
- Place the lettuce into a large bowl
- Thinly slice all the veggies and place over the lettuce
- Top with feta cheese
Greek Salad Dressing
- Combine all ingredients and whisk together. Place into a container. Top the salad with the dressing and store the remaining dressing in the fridge.
